Easy Avocado Toast

I came to the Avocado Toast party pretty late in the game. I thought it sounded weird especially as I’m not a huge fan of savory things for breakfast, and I’m a picky eater in general. But on a trip to New York City a few years ago, I tried it for the first time. I was trying to be more broadminded in my food choices on that trip and not too much of a pain for the friend I was traveling with. I was pleasantly surprised to find that I loved it! I can’t recall the type of bread or even the toppings, but I immediately came home and started trying out my own versions.

My recent favorite combination includes hard boiled eggs and grape tomatoes. I’ve noticed that the difference between “meh”  and yummy in avocado toast is the amount of salt in the avocado mash. Avocados can be pretty bland, so i like to make sure I’ve got enough flavor going on in there. I like to add lemon juice also to brighten up the flavor a bit, and it prevents the avocado from turning brown.

Quick & Easy Hardboiled Eggs

Hard boiled eggs are a quick and easy snack and make recipes like avocado toast super fast.  I like to keep several on hand in the fridge. But if you don’t have any hard boiled eggs ready to go, it’s super simple.

Put desired number of eggs in a pan of cold water and bring it up to a boil with a splash of plain white vinegar. The vinegar is optional but does help make the eggs easier to peel. When the water comes to a boil, put a lid on the pan, turn off the heat and set a timer for 10 minutes. After 10 minutes are up, drain the water and place the eggs in a bowl with ice water to cool down.  Once cool, place in your fridge for up to 7 days.

Easy Avocado Toast

Avocado toast is versatile and the combinations are endless. I like to use whole grain bread and top with hardboiled eggs and cherry tomatoes.

Ingredients
  

  • 2 pieces Multigrain bread
  • 1 small Avocado
  • 4-6 Cherry or grape tomatoes
  • 1 hard boiled egg
  • 1 tsp lemon juice
  • salt and pepper to taste

Instructions
 

  • Toast your bread.
  • Remove the pit from and scoop out the flesh into a bowl. Mash with a fork until it’s the desired consistency. Mix in a pinch of salt and pepper and the lemon juice.
  • Spread the avocado mixture on the toast. Slice the hard boiled egg and place on toast. Slice the tomatoes in half and arrange on the toast. Sprinkle with a little more salt, if desired.

Notes

I like to use Dave's Killer Bread Thin-Sliced Organic Sprouted Whole Grain Bread, but any whole grain bread is fine.
